Zucchini Bread – Yummy & Easy

My kids LOVE to bake – and Zucchini Bread is one of their favorites!

Here is my favorite recipe!

Kristen’s Zucchini Bread

3 Eggs – lightly beaten
2 Cups Shredded Zucchini
2 tsp Vanilla

3 Cups Flour
2 Cups Sugar

1 Cup Applesauce

3 tsp Cinnamon
1 tsp Salt
1 tsp Baking Soda
1/4 tsp Baking Powder
Dash Nutmeg

Combine the eggs, shredded zucchini and vanilla. Stir until blended.
Combine Flour and Sugar – stir.
Gradually mix the flour sugar mixture into the zucchini mixture, until well blended.
Add in applesauce, mixing as you add in the remainder of the dried ingredients.

Pour into loaf pans, or muffin cups!

Fill pans up to 3/4 full.

We’re using our FANCY Nordic Ware Mini Bundt Loaves Pan, Mini Heart-Shaped Pan, and some muffin cups this time.
This recipe will make up to 4 loaves of bread, depending on the size of your pans.

Bake muffins 40 minutes at 350.
Bake loaves up to an hour at 350.

Cinnamon Roll Waffles {2 minute breakfast}

OK, so this isn’t really a recipe, but it’s a brilliant idea!  It’s time to dust off your wafflemaker!  You can make SO many different treats in it.  We use ours for cornbread, brownies and hash browns too!

Want quick cinnamon roll waffles? Take a tube of cinnamon rolls, place them in your waffle maker and voila! You have quick mini waffles in around 2 minutes.

We are loving these right now.  Perfect size for kids, too!

Greek Yogurt & Oatmeal Banana Bread

I have little toddlers that love to eat.  Not quite where it all goes, but their appetite is the main reason it is absolutely necessary for us to shop at Costco.  I am lucky they like to eat healthy foods, at least!  My new trick is I have been adding flax and other forms of fiber to anything I can: smoothies, pancakes, etc.   Just be careful at first…haha.

We like to have banana bread on hand for a quick breakfast or snack.  I have tried many different banana bread recipes.  Some are too dry, some are mushy in the middle and some are just plain tasteless.  I finally came up with a recipe that is perfect!  We usually make 3 loaves at a time, it freezes really well.

Greek Yogurt & Oatmeal Banana Bread

Makes: 1 loaf, 3 mini loaves

Ingredients

  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 eggs (or 1/2 cup egg beaters)
  • 1 teaspoon of vanilla
  • 1.5 cups flour
  • 1/2 cup plain oatmeal
  • 1/4 cup ground flax
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup plain 0% Greek yogurt
  •  3-4 bananas, mashed (check for markdown bananas at the store!)

Mix it up!

  1. Preheat oven to 350
  2. With a mixer (or by hand in a bowl), combine the butter and sugar.
  3. Add eggs and vanilla.  Mix until combined completely.
  4. In a small bowl add flour, salt, soda, oatmeal and flax.  Mix it up with a spoon ans slowly add to big bowl.  Mix for a minute or so to combine.
  5.  Add yogurt and bananas.
  6. Coat bread pan with cooking spray.  Pour into a bread pan and bake for 50-60 minutes.  I always cook it a bit longer than expected to get the center cooked.  It won’t burn, it adds a great crust to the bread.
  • For a nice touch, add a sprinkle of raw sugar on the top before baking or mini chocolate chips!

Apple Turnovers

2 Medium Apples
1/8 Cup Water
1 Teaspoon Cinnamon
1/8 Cup Sugar
1 Can Crescent Rolls (we prefer Butter Flake for extra flavor)

 

Chop apples and combine with cinnamon, water and sugar in saucepan. Cook until apples are soft, but not saucy. Lay 4 crescents on baking sheet, fill with apple mixture then top with other 4 crescents. Crimp edges with fork, bake at 350 for about 10 minutes.

Top with Frosting, mine was homemade:

1 Cup Sifted Powdered Sugar
1/2 Teaspoon Vanilla
1 1/2 Tablespoons Water

Drizzle frosting over the top and enjoy!
